Lombardi's opened on Spring Street in 1905, and the trade spread out from those few blocks. Today you've got coal ovens downtown, wood-fired rooms that opened in the last twenty years, and counter slices for people who never sit down. What Manhattan does best is the slice built for someone in a hurry: thin, foldable, eaten standing up. The West Village and the East Village have the most places worth crossing town for.
